幸会·江南味道是一家位于宁波鄞州的甬帮菜餐厅,以宁波地道菜肴和海鲜为主,追求原汁原味。业主经营本帮菜将近20年,此次餐厅设计力邀古木子月设计事务所操刀,力图在竞争激烈的宁波本帮菜头部品牌中占据一袭之地。

Xinghui Jiangnan Flavor is a Yongbang Restaurant located in Yinzhou, Ningbo. It focuses on Ningbo authentic dishes and seafood, and pursues the original flavor. The owner has been operating Benbang Cuisine for nearly 20 years. This time, Gumuziyue Design Firm was invited to design the restaurant, trying to occupy a place among the leading brands of Ningbo Benbang Cuisine.

中国人的餐桌文化,让餐饮空间除了具备基本的餐饮功能之外,很大程度上还承担了商务宴请和情感交流的功能。所以,当下的餐饮空间设计,不仅仅要考虑餐饮的实用功能和操作动线,还要考虑餐饮环境的市场需要,赋予空间更多的美学要素和商务氛围。

The Chinese table culture makes the catering space not only have the basic catering functions, but also assume the functions of business entertainment and emotional communication to a large extent. Therefore, the current catering space design should not only consider the practical functions and operation lines of catering, but also consider the market needs of catering environment, giving more aesthetic elements and business atmosphere to the space.

设计从外立面开始入手,通过绿植和门厅的设计,营造与店名呼应的江南韵味:一面白色矮墙,一株碧玉云松,营造堂前庭院的写意春秋。清透的玻璃与格栅让内部的空间若隐若现,原木门与墙体的木饰面让入户的感觉多了一丝温润,如同东方君子的谦谦之仪,躬身虚引之间,自然入场。

The design starts from the facade, and through the design of green plants and hallways, it creates a Jiangnan flavor that echoes the store name: a white low wall, a jasper cloud pine, and a freehand spring and autumn painting of the courtyard in front of the hall. The clear glass and grille make the interior space indistinct, and the wood veneer of the original wooden door and wall makes the entrance feel a little more warm, just like the modest instrument of the oriental gentleman.

大门入口前端有一道格栅,把楼梯和底下的水景包裹起来,隐约处见山,不仅成为了入户的端景,更让光线在楼梯空间中形成了丰富的变化。【幸会有你·采味江南】八个字垂直排列与楼梯的墙面上,一道古木桩不仅在留白的墙面上成为了最好的装饰,也与踏步上的旧木头相互呼应,用岁月的沉淀唤醒客人们内心的对于东方文化的感情。举步间,有氤氲生于足底,入耳处,是一袭古装的服务员躬身问候。

There is a grid at the front of the gate entrance, which wraps the stairs and the water view below. The mountain is hidden, which not only becomes the end view of the entrance, but also allows the light to form a rich change in the stair space. [Nice to meet you, taste the south of the Yangtze River] The eight characters are vertically arranged on the wall of the stairs. An ancient wooden pile not only becomes the best decoration on the blank wall, but also echoes with the old wood on the steps, awakening the guests' feelings for the oriental culture with the precipitation of years. In the process of walking, there was a dense feeling in the soles of the feet. At the ear, the waiter in ancient costume bowed to greet him.

我通常不会在一楼停留,点菜的活也通常交给老板,有一些当季的好菜,他也会给我们配进菜谱。二楼前台就在楼梯上来的位置,服务人员在这里可以为客人做引导。设计师用石材做了一个端景的隔断作为动线的引导,将散台区和包厢区、宴会区做了一个区分。

I don't usually stay on the first floor. The job of ordering food is usually handed over to the boss. He will also provide us with some good dishes of the season. The front desk on the second floor is just up the stairs, where the service staff can guide the guests. The designer made a partition of the end scene with stone as the guide of the moving line, and distinguished the loose platform area from the box area and the banquet area.

收银台向东,首先来到宴会区。宴会区安排了LED屏幕,可以举行一些生日宴、谢师宴和一些团队聚会的活动。内部空间设计了金属垂帘,让这里在必要的时候可以作为散座来安排,而当包场的时候,整个区域也可以被包裹起来,相对独立。同时,方圆相间的视觉设计构成了一种跨越历史的对话,仿佛让人来到了旧时的江南园林中,月门与院墙的组合,让人在变化的空间层次中,探见设计的巧思。

The cashier faces east and first comes to the banquet area. LED screens are arranged in the banquet area, which can hold some birthday parties, teacher thanking banquets and some team gatherings. The interior space is designed with metal curtain, so that it can be arranged as separate seats when necessary, and the whole area can also be wrapped and relatively independent when the venue is reserved. At the same time, the visual design with square and round forms a dialogue across history, as if people came to the old Jiangnan garden. The combination of the moon gate and the courtyard wall makes people explore the ingenuity of design in the changing spatial level.

在当下的餐饮空间设计中,文化的在地融合是提升品牌体验的有效手段,所以幸会的包厢多以宁波的地名来命名,比如招宝厅、溪口厅、老外滩等等,当然也有例外,二楼最大的包厢名字叫幸会厅,可以容纳16-20位客人用餐。包厢的内装延续了整体空间的风格,以大面积的留白搭配局部的书画、绿植以及原木旧件的元素,打造属于江南味道的文化空间属性。局部的配菜空间中植入了幸会的品牌元素,作为一家有志于打造品牌餐饮的企业,这些标识的应用也是必要的。

In the current catering space design, the local integration of culture is an effective means to enhance the brand experience. Therefore, most of the boxes are named after Ningbo's place names, such as the Zhaobao Hall, Xikou Hall, Old Bund, etc. There are certainly exceptions. The largest box on the second floor is called the Xinghui Hall, which can accommodate 16-20 guests. The interior decoration of the box continues the style of the overall space, and creates a cultural space attribute of Jiangnan flavor with a large area of blank space and elements of local painting, calligraphy, green plants and old logs. The local side dish space is embedded with the lucky brand elements. As an enterprise interested in creating brand catering, the application of these signs is also necessary.

不同的包厢有不同的尺度和装饰,并根据是否有窗等因素去进行内部的墙体处理,尤其是在无自然采光的包厢的处理上,通过玻璃、镂空等方式向过道借光,并佐以人工照明的方式,达到视觉上的通透和内部环境的舒适性。

Different boxes have different scales and decorations, and the internal wall treatment is carried out according to whether there are windows and other factors. Especially in the treatment of boxes without natural lighting, light is borrowed from the aisle through glass, hollowing and other ways, and artificial lighting is used to achieve visual transparency and comfort of the internal environment.

由于空间有限,餐厅内部安排了两个公共卫生间。作为承担重要功能的公共空间,其设计一定程度上对于客户的体验有着重要的作用,而幸会的卫生间设计通过大量的局部造景,营造一种曲径通幽的东方意境和自然感,让客人更加舒适。

Due to the limited space, two public toilets are arranged inside the restaurant. As a public space with important functions, its design plays an important role in the customer's experience to a certain extent, while the design of the happy toilet creates a kind of oriental artistic conception and natural sense through a large number of local landscaping, making the guests more comfortable.

在幸会的空间语言中,人与人的关系被联系到场景中来,在美味菜肴的基础上,借助在地文化拉近人与人之间的距离,赋予宴席更高的情感价值、文化价值和商业价值,从而为餐厅带去更大的设计赋能,这就是设计者初心所在。

In the space language of the happy meeting, the relationship between people is linked to the scene. On the basis of delicious dishes, the designer's original intention is to close the distance between people with the help of local culture, endow the banquet with higher emotional value, cultural value and commercial value, so as to bring greater design empowerment to the restaurant.
